The Raw Bar Was There From Day One
At Felt Bar & Eatery, the raw bar wasn't added after the restaurant became established.
It was part of the concept from the beginning.
The menu generally carries around seven or eight dedicated raw-bar preparations at a time, including rotating oysters and preparations such as crudos, sashimi, ceviche and tartares. Exact offerings change with the menu and seafood availability.
How Felt Bar & Eatery Serves Its Oysters
The restaurant team generally favors West Coast oysters, although East Coast varieties can appear depending on availability. Oyster selections may change frequently.
Felt Bar & Eatery serves its oysters on salt rather than ice. Oyster accompaniments evolve with the menu, as do the exact oyster selections.

Richard Romney spent 17 years at Takashi, including 15 years as general manager and bar director, and the restaurants continue to work with high-quality seafood distributors familiar to the team from that experience.
But Felt Bar & Eatery doesn't wrap that seafood program in a formal dining experience.
The philosophy is “highbrow meets lowbrow”: high-level food and drinks served in an intentionally relaxed environment.
You can order oysters, raw seafood and an original cocktail and still feel like you're sitting in a neighborhood bar.
Pair the Raw Bar With The Lab
Felt Bar & Eatery's cocktail program gives the restaurant an identity very different from Brownstone 22's classic oyster-and-martini approach.
The Lab generally features six to nine original cocktails developed around a changing theme. The broader cocktail program evolves periodically as well.
That makes oysters and cocktails an experience in their own right rather than simply an appetizer before dinner.
The Experience Behind Felt's Raw Bar
Before opening Felt Bar & Eatery, Richard Romney spent 17 years at Takashi, including 15 years as general manager and bar director. His extensive experience in Salt Lake City's seafood and hospitality scene helped shape Felt's raw bar concept.
Romney partnered with longtime friend Chef Travis Herbert, whose culinary career includes serving as a corporate chef for Fleming's Steakhouse. Herbert brings a creative, seasonal approach to Felt's menu, including its raw seafood preparations.
Together, Romney and Herbert created a restaurant where high-quality seafood, inventive cooking and original cocktails come together in a relaxed Main Street setting.
