Dinner Before Capitol Theatre
A night at the ballet or opera doesn't mean dinner has to be formal.
Felt Bar & Eatery was built around the idea of high-level food and drinks in an intentionally casual setting—what the team describes as “highbrow meets lowbrow.”
That gives you plenty of ways to make Felt Bar & Eatery part of your performance night.
Have oysters and cocktails at the bar. Share dishes. Order an elk burger and a drink. Or sit down for a complete dinner before heading to the theater.
What to Eat Before the Performance
The restaurant has featured dishes such as mushroom polenta made with mushrooms grown in Salt Lake City.
And don't overlook the bread.
Felt Bar & Eatery's house-made focaccia is paired with a butter created by the kitchen team that changes regularly. Past combinations have included blackberry balsamic and yuzu-miso.
The menu changes, so part of the experience is seeing what's being served when you arrive.
Oysters & The Lab Before the Show
If cocktails are part of your theater night, Felt Bar & Eatery has another defining feature: The Lab.
The Lab generally features six to nine original cocktails developed by members of the bar team around a changing theme.
That makes it easy to build a pre-show stop around oysters and cocktails or make Felt Bar & Eatery the full dinner portion of your evening.
Non-alcoholic wine, beer, shrubs and crafted non-alcoholic cocktails provide additional choices for guests who aren't drinking alcohol.
The Experience Behind Felt Bar & Eatery
Chef Travis Herbert was named a 2026 James Beard Award finalist for Best Chef: Mountain for his work at Felt Bar & Eatery.
Restaurant partner Richard Romney brings another layer of experience to the raw-bar program. Romney spent 17 years at acclaimed Salt Lake City restaurant Takashi, including 15 years as general manager and bar director.
That background helps explain the restaurant's approach: serious attention to food, seafood and drinks without turning dinner into a formal fine-dining experience.
